Chicken Casserole

Tonight for tea we are having chicken casserole.
I thought I would share the recipe with you - its quick and cheap and you can add anything extra you like!

Chicken Casserole

Chicken - can be breast, thigh or pieces - amount to suit. (I have used as little as one breast and tonight we have three big ones)
1 onion chopped
1 cup of rice - more can be added - just remember to adjust water
Packet of bacon pieces - or bacon rashers - amount to suit - I usually use 5 rashers
2 chicken stock cubes
Tomatoe sauce - amount to taste
600ml of boiling water - add more if you added more rice.

Brown the onions, chicken and bacon in a pot (I use one that can go from stove to oven). Add the rice and stir until rice is coated.

Add in the boiling water, tomatoe sauce, stock cubes and salt and pepper to taste.

Bring it to the boil and then place in the oven at 180 degrees until rice is cooked.

You could add all manner of things or use it as we do as a cheap meal. The kids love this and its really nice as leftovers too.

Jammies for Jack

I have been promising Jack some jammies forever. I finally got around to making them!

Here they are - the pants are from my absolute favourite PJ patterns New Look 6313. Its such a great pattern and I have used it over and over again. The material for the pants is some flannel from Textile Traders.

The top is the Mamu Sabrina pattern bought from Craft Mamas. I did view 4 which is a fairly plain use of the pattern - there are some great variations in this and I will be trying some more. The fabric is Colorado from Crafty Mamas and rib knit from my stash. The iron on is a Ben 10 ones I bought off Ebay and Im not overly impressed with the quality. But Jack will love it and thats cool!

Tomorrow I will make Lainey a top to go with some pants I made her.

Brush With Fame

Mike and I won tickets to be members of a live audience for the 720 ABC Radio Sports Talk programme on Saturday morning. The idea was the audience was half full of West Coast Eagles fans and half full of their cross town rivals - fan of the Fremantle Dockers.

It was an awesome morning (and yes I know you have to be into sports and especially football to enjoy it!). The ABC put on a great spread of coffee and nibbles and the conversation was excellent.

I also had the opportunity to meet some of my favourite presenters. Gillian O'Shaughnessy and Glynn Greensmith where kind enough to pose for a piccy with me. I also met Russ Wolfe and some of the news presenters.

It was a great morning - I had alot of fun!

Toilet Training....

Pic courtesy of babble.com

Its that time again...time to toilet train...Lainey is ready for it and so we decided this week to make a start. We got home from Easter on Tuesday so we chose yesterday (Wednesday) to start.

We had already bought her some knickers (jocks, nick nocks, nic nics) and we were all ready to proceed. We got the potty out of retirement and put it in the bathroom.

Wednesday morning came and we had four accidents in quick succession...then bingo - she did a wee in the potty. Boy you would have thought she had won the Nobel prize with the fuss we made! She did so well - Im so proud of her!

We have had a few accidents in the first 24 hours since then - but one major break through today was a very small poo in the potty. She certainly did that a lot quicker than Jack ever did (although Jack trained very fast too). And yes she has had a number 2 accident since then but hey - she is well on her way out of nappies and into nick nocks.

Stay tuned!

Easter Catch Up

Well Easter has come and gone. I will readily admit to over eating - I hadn't had chocolate in so long it was almost impossible to not have some. I can see how one can slip so easily back into old habits and put weight back on....

We had a lovely Easter picnic at Kings Park. The weather held out and only gave us a very small amount of grief. My sister in law and her partner joined us and the kids had an Easter egg hunt and lots of play time on the wonderful equipment. We went to the Synergy Playground which is a favourite of ours.

It was a lovely long weekend.
