I Heart Hugh

I recently have been watching the latest edition to the River Cottage stable...River Cottage Autumn. I am very much enjoying it and am really interested in not only the usual display of big veg and animal husbandry but also the conservation track Hugh Fearnley-Whittingstall is taking this time. I know he always has been green and trying to encourage us to do more but this series is fabbo....projects like Landshare where people who have land register so those who want to work it can - should be adopted all over the world. Even a veggie plot per person could significantly reduce our strain on our planet.

Good work Hugh - keep it up!

Manic Monday

What a day...Mondays are super busy and today was no exception.

Housework, washing (till machine broke down - off for repairs), post office, library, Jack to GP for eye specialist referral, lunch, baking and still dinner to do ...a housewife's day is never done! On top of that its been as hot as the sun here.

There were a number of items I posted today..one was the frou frous I made for Glenda..see them here..then there was the cards for a swap at Crafty Mamas...can post the pics till they arrive :) and a present I made for my dad for his birthday in February..a wheat bag. Here are the pics. I have no problem posting them because my parents rarely read my blog!




So now, onwards with the dinner and then something crafty...maybe some lunch wraps for Lainey...

More Lunch Wraps



I made some more wraps today - so I could have big ones for 2 rounds of sandwiches and small ones for cupcakes and other home baked goodies. I also needed a couple of each size so I could make tomorrows lunch today and put it in the fridge IYKWIM!

My next task is to make the boys a lunch bag each...then they have a totally green lunch box!

Monday Madness




Monday is always a busy day for me...its the day I set myself up for the week and cook and clean my way into oblivion. I am so tired tonight I am heading for bed in a moment. Its only 9.30pm and that's early for me.

Work is cranking up on the Homemade cook book so if your reading this and want to get involved send me your recipe at handmaderecipes@gmail.com. I know I have a couple of gals from OS that read this blog and we would love your input too. All proceeds from the sale will go to help Victorian bush fire survivors.

On a personal note I handed in my paperwork to become a community volunteer today. My new years plan this year was to become more civic minded and so I have volunteered my time with the aged community here in my home town. I'm hoping to get a Meals on Wheels run which means the kids can come too. They will also benefit and learn the importance of helping others in our community. I cant wait to get going.

Tomorrow is another busy day - in fact this whole week is so busy my diary is over flowing!

Now off to bed....

Mondays Cooking



I love to bake and cook slices and cakes and cupcakes and all the other divine things that are no good for you.

Today I used up the majority of some ingredients I got from a girlfriend who had a glut of zucchini and free range eggs from her farm.

I made some piklets and cupcakes for lunch boxes as well as these two recipes.

Zucchini Slice

Ingredients:

* 5 eggs
* 150g (1 cup) self-raising flour, sifted
* 375g zucchini, grated
* 1 large onion, finely chopped
* 200g rindless bacon, chopped
* 1 cup grated cheddar cheese
* 60ml (1/4 cup) vegetable oil

Method

1. Preheat oven to 170°C. Grease and line a 30 x 20cm lamington pan.
2. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.

I also made this Sultana Cake recipe - an untried one but it uses 6 eggs so I thought it was a good choice. This was from the Simply a Collection - Country Cooking at its Best...I bought from the McGrath Foundation recently.

Sultana Cake

250g butter
250g sugar
6 eggs
330g of Plain Flour
1 teaspoon of baking powder
250g sultanas

Cream the butter and sugar together and add eggs 2 at a time. Add sultanas and then fold in flour. Place in a 20cm greased and lined square tin. Bake for 1 hour in a moderate oven.

I used my oblong spring form for this and I soaked the sultanas in OJ quickly.

I am playing along with Cindy's Eye Spy and this week our theme comes from Sharon at Handmaiden - something delicious.

Home made bread...I love it, I love the smell and it is always super delicious. Before I had Lainey I used to make bread by hand, but I found that after her arrival it wasn't something I could sustain. So my dad gave me his bread maker when he upgraded and after replacing the bearing in the pan (for the tiny sum of $30) I now bake bread in the maker. I also use the maker to make the dough for pizza and bread rolls.

Simply delicious.
