Mondays Baking

I need to get back into the swing of baking again as Mike and Jack go back to school/work this week. So this morning I have made these:

Choc Chip Cupcakes



2 cups plain flour
1 tablespoon baking powder
1 cup white sugar
2 tablespoons custard powder
2 eggs
3/4 cup milk
3/4 cup veg oil
Choc chips to suit.

Mix well. Put into muffin pan and cook at 180 degrees until cook.

Pumpkin Muffins



1 cup mashed pumpkin
1 egg
1/4 C oil
3/4 brown sugar
1 tsp vanilla essence
2 C SR flour
1/4 tsp bi carb
1/4 tsp salt
3/4 C butter milk


Mix together pumpkin, sugar, egg, oil, vanilla sift in dry ingredients,add buttermilk and fold in gently . scoop into lined muffin pan.
Cook in mod oven 15 mins.

Lemon Teacake

Whilst making a Lemon Slice this afternoon I remembered that Mike needs ot take morning tea to work to share. he does it twice a term and I forgot last week so I luckily remembered in time to make something this week.

As I have a glut of lemons and eggs I looked through my Commonsense Cookery Book (one of my new favs) and found a recipe for Lemon Teacake. I have made it an its in the oven...when it comes out it gets a syrupy coating on it.

Here is the recipe:

Lemon Teacake


125g of marg
3/2 cups castor sugar
1 egg
1 3/4 cup self raising flour
1/2 cup milk
2 teaspoons lemon rind finely grated
Extra 1/4 cup sugar
1/4 cup lemon juice.

1. Preheat oven to mod heat
2. Grease a loaf tin
3. Cream butter and sugar
4. Beat egg and add slowly to creamed mixture and beat well.
5. Sift flout
6. Add alternately with the milk, stirring well.
7. Fold in the lemon rind
8. Place into pan
9. Bake in mod oven for 30 to 35 mins.
10. Dissolve the extra sugar and lemon juice and stand in a warm place
11. When cake is cooked, remove from the oven and gently spoon the lemon and sugar mixture over the top.
12. Allow to cool in the pan

Note orange may be substituted for lemons.

I hope it tastes nice as I wont be able to taste it before it goes to school!

Lemon Slice

Well there is nothing nicer after spring cleaning your kitchen than cooking in it.

This afternoon I have made this Lemon Slice. I got the recipe from a girlfriend of mine and we LOVE it :)

Lemon Slice

250g unsalted butter soft
85g of icing sugar
2 1/2 cups of plain flour4 lemons
4 eggs
400g caster sugar
1 tspn baking powder

Base
Preheat the oven to 170 degrees. Grease and lin a 30x30 baking tin ( I do it in two smaller ones). Blend the icing sugar and butter together. Add two cups of flour and mix together until it forms a ball. Press into the tin(s) and chill for 15 minutes then bake for 15 minutes. Set aside and cool.

Topping
Grate the rind of 2 lemons and then juice all 4 (need about 90mls). Whisk the eggs and caster sugar until well combined. Add the remaining flour and bakinng powder, rind and juice. Whisk gently to combine.

Pour over COOLED BASE. Must be nearly cold or the base will go soggy.

Return to the oven for 30 minutes or until set (giolden tinge).

Sprinkle with icing sugar to serve.

This is so super delicious and I can tell you doe not last long!

Death By Chocolate Biscuits

At the recent Crafty Mamas retreat Sara - of willow&moo fame made some chocolate biscuits...gooey, divine, delectable, simple cant stop at one chocolate biscuits. Then she shared the recipe... Mine arent exactly the same but the taste reminds me of hers, if you get my drift...the chocolate pieces are too big and i used dried strawberries instead of cherries but all together a sterling effort they have made. And the kids helped me so that was wonderful fun.

A glass of milk is most certainly required to execute the devouring of these!
