Sunday Morning in the Kitchen

I spent the morning in the kitchen today and amongst alot of zucchini recipes I made the following piklets and scrolls.

The piklet recipe came from the handbook for my new electric frypan. I tripled the recipe so I would have enough to freeze for lunches.



Piklets
1 egg
1/4 cup sugar
1 cup SR flour
3/4 cup milk
pinch salt

Beat egg and sugar until mixed and creamy with electric mixer
Add flour milk and salt and beat till smooth
Heat frypan and add heaped spoonfuls cooking until golden on both sides.


Ham and Cheese Scrolls

INGREDIENTS

2 cups self-raising flour
30g butter, chopped
¼ cup chopped basil
½ cup milk
½ cup water
1 cup grated tasty cheese
½ cup chopped ham
½ red capsicum, seeded, chopped
¼ cup chopped gherkin (optional)

METHOD
1. Preheat oven to very hot, 220°C. Lightly grease a scone tray.
2. Sift flour into a large bowl. Add butter. Rub in lightly using fingertips. Stir in basil.
3. Make a well in the centre of flour mixture. Pour in combined milk and water all at once, reserving about 1 tablespoon. Using a butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
4. Turn onto a lightly floured surface. Knead lightly. Press or roll out to form a rectangle about 1cm thick.
5. In a small bowl, combine cheese, ham, capsicum and gherkin. Sprinkle over dough, pressing slightly.
6. Roll up to form a log. Cut into 2cm-thick slices and arrange slightly overlapping, cut side up, on prepared tray. Brush with reserved liquid. Bake for 12-15 minutes until scrolls sound hollow when tapped. Cool on a wire rack.

I then made this again but with other ingredients like feta cheese and corn and called it pizza scrolls. I also spread sun dried tomoato pesto on the bases of both of these first. Nice addition!

Baking with the Kids

Today we did some baking. The kids love it and I really need to get around to making them an apron.

Today we made choc chip muffins and M&M biscuits. All of course wonderfully healthy!

The muffin recipe is this one:

2 cups plain flour
1 tablespoon baking powder
1 cup white sugar
2 tablespoons custard powder
2 eggs
3/4 cup milk
3/4 cup veg oil

Mix well. Then add your add ins...I added 200g of choc chips.



The biscuit recipe came from here...

And looked like this...



They look ugly but taste very nice!

Homemade - The Handmade Recipe Book



Its finally on its way out the door! After a tonne of work by a handful of wonderful volunteers the Homemade Recipe Book is ready to rock and roll.

It can be purchased from here and all monies go to the Salvos to help out the survivors of the Black Saturday bushfires.

I made a recipe from it today:

Roasted Pumpkin and Garlic Soup

1 head garlic
olive oil
1.5 kg pumpkin peeled and cut into chunks
1 onion
1 stick celery
1 very large potato peeled and diced
2 litres of chicken stock
1 bay leaf
salt and pepper

Preheat the oven to 180 degrees

Cut the head off the garlic, drizzle in OO and wrap in foil

Toss the pumpkin in OO and roast that with the garlic on an oven tray for approx an hour

Finely chop the onion and celery

Sauté in a small amount of OO in a large saucepan

Add the potato and stock and bay leaf. Bring to a simmer. Squeeze the garlic to release the cloves and add that with the pumpkin to the soup.

When the potato is soft then remove the bay leaf and puree. Add salt and pepper to taste.

We are going to have it tonight for dinner. It smells divine.

Baking Up A Storm

I decided to bake today and bake I did.

I made four loaves of this:

Banana Bread
120g marg
185g castor sugar
185g plain flour
2 eggs
1 tspn vanilla essence
1 1/2 tspns baking powder
2/3 bananas mashed

Cream the butter and essence and add the sugar slowly mixing well. Add eggs one a a time and also mix well. Sieve the flour and baking powder. Fold the creamed butter and flour mixture together and mix well. Add the mashed bananas and mix well. Pour into loaf tin and cook for approx 1 hour mins at 180 degrees or until cooked through.



Then I made two batches of these:

ANZAC Biscuits

1 cup SR Flour
1 cup sugar
1 cup rolled oats
1 cup dessicated coconut
125 butter melted
1 tablespoon Golden Syrup
1 teaspoon bi carb
2 tablespoons boiling water

Preheat the oven to 180 degrees and line a baking tray.

Sift flour. Place all the dry ingredients into a bowl and mix thoroughly.

Add melted butter, golden syrup and boiling water to which the bi carb has been added. Mix to firm consistency.

Place spoonfuls of mix onto tray and bake till brown



I also made a Pumpkin Pie from here and then some of these:

2 tablespoons melted butter,.

Mix and cook.




I think my work here is done...dont you?

I Heart Hugh

I recently have been watching the latest edition to the River Cottage stable...River Cottage Autumn. I am very much enjoying it and am really interested in not only the usual display of big veg and animal husbandry but also the conservation track Hugh Fearnley-Whittingstall is taking this time. I know he always has been green and trying to encourage us to do more but this series is fabbo....projects like Landshare where people who have land register so those who want to work it can - should be adopted all over the world. Even a veggie plot per person could significantly reduce our strain on our planet.

Good work Hugh - keep it up!
