
Its finally on its way out the door! After a tonne of work by a handful of wonderful volunteers the Homemade Recipe Book is ready to rock and roll.
It can be purchased from here and all monies go to the Salvos to help out the survivors of the Black Saturday bushfires.
I made a recipe from it today:
Roasted Pumpkin and Garlic Soup
1 head garlic
olive oil
1.5 kg pumpkin peeled and cut into chunks
1 onion
1 stick celery
1 very large potato peeled and diced
2 litres of chicken stock
1 bay leaf
salt and pepper
Preheat the oven to 180 degrees
Cut the head off the garlic, drizzle in OO and wrap in foil
Toss the pumpkin in OO and roast that with the garlic on an oven tray for approx an hour
Finely chop the onion and celery
Sauté in a small amount of OO in a large saucepan
Add the potato and stock and bay leaf. Bring to a simmer. Squeeze the garlic to release the cloves and add that with the pumpkin to the soup.
When the potato is soft then remove the bay leaf and puree. Add salt and pepper to taste.
We are going to have it tonight for dinner. It smells divine.
