"The Best Ever" Challenge - Zucchini Baking Recipes

Ok - we harvest ALOT of zucchinis out of our veggie patch yesterday and so I needed to find ways to use the.

So here is a collaboration of some of my favourite zucchini baking recipes...I love zucchini shredded through spag sauce, on the BBQ, ratatouille, in lasagna...and I have even been given recipes that use zucchinis in place of apples in pies.

Today I have made the following which all the crew have liked...

Zucchini Cheddar Bread



I found this recipe here at honey&jam. Its a great recipe - smells divine when cooking too.

10-12 servings.

Position a rack in the center of the oven. Preheat the oven to 350 F. Grease a 9 x 5-inch (8-cup) loaf pan.

Whisk together in a large bowl:

3 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda

Add and toss to separate and coat with flour:

1 cup coarsely shredded zucchini
3/4 cup shredded sharp Cheddar cheese
1/4 cup chopped scallions (or white onion)
3 tablespoons chopped fresh parsley
1 tablespoon snipped fresh dill, or 2 teaspoons dried

Whisk together in another bowl:

2 large eggs
1 cup buttermilk
4 tablespoons (1/2 stick) warm melted unsalted butter or vegetable oil

Add to the flour mixture and mix with a few light strokes just until the dry ingredients are moistened. Do not overmix; the batter should not be smooth. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes. Let cool in the pan on a rack for 5 to 10 minutes before unmolding to cool completely on the rack.

P.S. No buttermilk? Add a touch of vinegar to 1 cup of milk. That’s what I did and it worked perfectly.


Zucchini Slice



Everyone loves a zucchini slice and they are so easy and versatile....hot or cold they are a crowd pleaser.

I used this recipe from the handmade helps Out recipe book...a collaboration I worked on earlier this year to raise money for the people effected by the Black Saturday bush fires.

1 cup grated zucchini
1.2 cup frozen or fresh corn kernels.
1 onion finely chopped
thyme and parsley
3 rashers of bacon chopped
1 cup grated cheese
1/2 cup olive oil
3-4 beaten eggs
salt and pepper
1 cup SR flour

Preheat the oven to 180 degrees.
Place all of the ingredients into a bowl in the order listed above.
mix well
Place into a greased slice tin and bake for 30-40 minutes.

Goes fabbo with salad and chutney.

Savoury Zucchini Muffins



150 g bacon (chopped)
1 small onion (chopped)
1 cup of self-raising flour
1/2 cup cold pressed olive oil
4 eggs
1 teaspoon mustard (optional)
1/2 teaspoon paprika (optional)
2 cups grated zucchini
1 cup grated tasty cheese

Mix all of the ingredients together but dint over mix. Put into a muffin tray and cook until the top bounces back when pressed down.
